Beef cubes in apricot sauce
11/2lb beef cut into cubes
3 cloves garlic
1 12oz jar apricot preserves
1 package of spinach
1 sm can of diced olives
3 tsp white or red wine vinegar
3/4 cup chopped pecans
Dice meat until browned on medium heat in slightly oiled pan. Season to taste. Remove. Add minced garlic to pan, cook for 3-5 minutes, stir, don't burn garlic. Add red or white wine. Cook another minute. Add aprictot preserves, add diced olives. Cook until caramelized, then add meat. Place spinach on top of dish. As spinach starts to wilt into dish add the pecans.
Serve over rice or with side dish. I served mine over mashed red potatoes with the skin left on. I also added homemade ranch dressing to the mashed taters, plus butter & salt. Was perfect for my hubby, 1 baby & me. ENJOY.
